mortar and pestle material Buyer’s Guide
Pork Tamales with Double-Chile Sauce
The mortar and pestle are ancient tools that no modern kitchen should be without. They’re handy for everything from cracking peppercorns and crushing tender herbs to making pesto and guacamole. Yet, these days, electric spice grinders and food processors often take their place, and that’s a pity, because after testing an assortment of mortars and pestles, we’re convinced that a good set can perform as well—or even better—at many tasks.
Of the 1mortars and pestles we tested, many models frustrated us or proved to be of limited use, but a few workhorses were delightfully versatile and excelled at every task we threw at them, including crushing garlic, spices, and nuts.
What to look for
In performing our tests, we discovered that material, shape, and size are the key characteristics to look at when shopping for a mortar and pestle.
The ideal material for a mortar and pestle is something hefty and very hard. It shouldn’t be so rough as to be porous or difficult to clean, nor should it be so smooth as to be slippery. The Thai granite model above embodied our ideal: Literally rock hard, its matte surface created friction for grinding but was smooth enough to wipe clean easily, and its heft made crushing a breeze. Several other stone models were also very effective. However, an Italian marble mortar paired with a light, relatively soft wood pestle failed to impress because the pestle required us to work harder to achieve good results, and it couldn’t grind cumin seed. In fact, all the wood mortars and pestles we tried seemed too light and soft to be effective at all the tasks we wanted them to do. Other materials, too, had shortcomings: With porcelain, breaking was a concern (one model we tested broke on the first use). And slick surfaces like stainless steel let ingredients slip around too much.
The best mortars have a deeply rounded shape that keeps ingredients from jumping or spilling out. Wider, shallow shapes don’t contain ingredients as well. A stable base is also important. When it comes to pestles, many are too narrow and rounded, so ingredients readily pop out from under them. A broader, more gently rounded base works far better.
As for size, think big rather than small. If you’re looking to buy just a single mortar and pestle, a capacious mortar can mash small quantities just as well as large. But a too-small mortar is, ultimately, of limited use and lets ingredients pop out (the low-profile model at far right, however, innovatively solves this problem).
This solid, hand-carved mortar and pestle (pictured above) excels at the full range of tasks, from mashing delicate herbs to grinding stubborn peppercorns. The heavy, broad-based pestle needs to do little more than fall on ingredients to crush them—very little elbow grease required. And the bowl’s deeply sloped shape and matte texture keep ingredients in the center, so there’s no need to chase them around with the pestle. At 1pounds, this mortar won’t scoot around during use, but we suggest putting a cloth beneath it to protect your counter. Also comes in 6-, 8-, and 9-inch sizes.
How we tested
We tried 1mortars and pestles made from ceramic, porcelain, different kinds of stone, and wood. They ranged in size, capacity, and shape. To assess them, we mashed cloves of garlic, slices of ginger, peppercorns, cumin seed, cilantro, and pine nuts, and made a curry paste.

Admittedly expensive, this handsome block certainly seemed to live up to its billing as “the last knife block you ever have to buy.” The heaviest model in our testing, this block was ultrastable, and its durable bamboo exterior was a breeze to clean. Well-placed medium-strength magnets made it easy to attach all our knives, and a rotating base gave us quick access to them. One tiny quibble: The blade of our 12-inch slicing knife stuck out a little.
Schmidt Brothers Downtown Block
This roomy block completely sheathed our entire winning knife set using just one of its two sides—and quite securely, thanks to long, medium-strength magnet bars. Heavy, with a grippy base, this block was very stable. An acrylic guard made this model extra-safe but also made it a little trickier to insert knives and to clean; the wood block itself showed some minor cosmetic scratching during use.
Schmidt Brothers Midtown Block
This smaller version of the Downtown Block secured all our knives nicely, though the blade of the slicing knife stuck out a bit. With a base lined with grippy material, this block was very stable. An acrylic guard afforded extra protection against contact with blades but made it a little harder to insert knives and to clean; the wood itself got a little scratched during use.

Spices add flavor to our life and not just to our meals and beverages. The real flavor of the spices can be truly tasted when they are freshly grinded and used. It is easy to buy the pre-ground spices and herbs from the market, but the problem is most spices and herbs have deplorable nature. This means pre-grounded spices are not that healthy and if you want to reap the health benefits of the fresh herbs and spices, you need to grind them fresh. You will need a quality spice grinder if you don’t want to get stuck with the Stone Age mortal and pestles.
You can broadly categorize the spice grinders as-Manual and Automatic or Electric. The products in our top list are from the both categories. So pick, one based on your preference.
Spice grinders are not like other products, you use them to grind ingredients you use in your food. This is why materials used in building the product are important as cheap plastic with substances like phthalates and BPA will seriously harm your health. Check the materials used in building a grinder and how durable they are.
If you are not up for fidgeting a lot with your grinder, it is advised to choose on with low maintenance. Expensive spice grinders with a lot of moving parts demand high maintenance and can also break down easily. It is best in your interest to choose one with easy maintenance.
OK, Just like the Molcajete, you are going to place 1/cup of Jasmine Rice in the Mortar….. then crush and grind it into rice flour, or at least rice meal.
The first 1/cup will turn grey with dust left over from carving; go ahead and dump it in the garbage.
Grind the remaining 3/cup rice in 1/cup increments…
You will notice that the rice remains white after grinding the last 1/cup.

Space is never not cool. But seriously, these scarves are interesting enough to be worn by men and women alike—every time I see my friend and Modest designer Victoria Pater wearing hers, I start feeling intense space-scarf jealousy.
When three-time James Beard Award winner and three-Michelin-star molecular gastronomist Heston Blumenthal endorses a book as “an original and inspiring resource,” you know the pages within are going to take the reader on an unconventional detour from the countless cookbooks already available.
Years ago I had the pleasure of watching gearhead-turned-gastronomist Dave Arnold make ice cream with “smoking” cold liquid nitrogen, infusing vanilla bean and cream with an oak extract he coaxed from single malt scotch using a rotovap (rotary evaporator). The culinary moment was forever etched into memory with a dramatic explosion—an unplanned moment of molecular gastronomy gone awry—when LNmet cream too quickly. Thankfully there was enough ice cream left to salvage and enjoy.
Anyone can put together an emergency preparation kit. Not everyone can put together a survival kit quite like this luxurious hand-assembled curated collection comprised of both essentials and “glad these were in there” non-essentials. A bag of emergency supplies like this tells someone, “I’ve got you covered, and we’ll get through thick and thin for the next 7hours comfortably.” Give it to the perpetually high-strung worrier of disasters and what-if situations. Maybe they’ll feel just a little less stressed the next time the power goes out knowing there’s a 175-item survival kit of goodies ready to dig into.
First of all thanks for reading my article to the end! I hope you find my reviews listed here useful and that it allows you to make a proper comparison of what is best to fit your needs and budget. Don’t be afraid to try more than one product if your first pick doesn’t do the trick.
